The white fleshy bit is what is left once the outer bulb is cut/sheared away. This is still full of the nutrients of the bulb, hence why they last so long and I think the hyacinth just drinks up through this. We never cut hyacinths and results are fine. Plus they ooze slime if you do cut them!
