But, i really need someone elso as well who i can leave when i need a bit of time off who can manage pressuire but worry about taking someone on and then being unable to afford them during the winter months. Has anyone else overcome this problem. I do often get letters from college but i think someone with experience would be better - any advice anyone!!!

I know exactly what you mean, i need someone to help out too, but who's flexible. I had my parents helping me out (yes, its hard working and living with them and we have had plenty of bust ups!) Hope they'll dissapear when im stable enough to employ ppl. You cant leave juniors on their own, unless they have plenty of experience and are more mature, they'll be on the phone begging you to come back!
