I've done a few of these leila, usually large displays about 4'long. they tend to be for say a man who was a keen gardener and what was wanted was something that resembled a garden if you like. Right now there are quite a few plants available e.g. geranium, verbenas, fuschia, pot ivy etc. I do these in shallow square dishes, usually 2 or 3 butted together as they can be heavy if done in one piece. Add in some grasses and moss around the edges etc to create a wild garden theme. Of course, it's not everyone's cup of tea but far removed from exotic plant arrangements.
