I must say I don't fancy attempting to dye roses.
Like you said how can you be sure you are going to get the right colour. Even if you do a dummy run there is nothing to say you will get the same colour for the wedding day. I have suggested she tries to find some glass beads etc, ribbon to go around the stems of the posy.
I might suggest she gets her friends florist to do her flowers.
