Here's a few incl. in recent session at college:

Use leafshine in a well ventilated area
Don't store floral foam at high level - when taking down from a shelf the dust could get into eyes
Store scissors/wires appropriately
leaves/petals on floor - risk to customers (recent case of florist in Marylebone station, sued cos customer slipped)
Ensure any heavy boxes lifted correctly - risk of back injury
Switch off glue gun when not in use, allow to cool down before putting away

is that sort of thing you're looking for? Or something more complex??
