We tend to 'handle up' hand ties first thing in the morning regardless of what time the wedding is. We trim down and dry off the stems before putting the ribbon on. IME, the only ones to really watch are narcissi, they need cutting down and repeated drying off before ribboning as the stems ooze for ages after being cut.
