Goodie, we have done a wedding this weekend which needed something very similar. We actually put water pearls (like crystal accents but balls!! lol) in the vases and then secured round cylinder oasis to the top of the vase pushing them down slightly. We disguised the oasis with a coloured ribbon.

The only problem we had was that it was in a marquee and the ground was a little uneven, so if the table was not level the arrangements tipped, having said that we were lucky we only lost one (we were at the wedding too). All I can say to you is to secure the oasis well on top of the vase and try and keep the arrangement balanced evenly and not too tall. Try also to not let the caterers handle the vases and arrangements as they can be a bit heavy handed!!!
