You really need to tailor this to your needs. However what I think you and everyone should remember is that old saying, "if you pay peanuts, you get monkeys"
Work out what best suits the needs of your business and initially, if possible use yourself, family etc but as your business grows you will have to ensure that the delivery aspect is dealt with correctly. Not everyone of a certain age is sloooow, if you invest time and effort in selecting the right person you'll get good results.
