I've just had a look at the swan pic you posted, the one I asked you for advise on last week didn't get ordered in the end-too expensive! However I did try out a bit of a prototype first to see how it would work before I agreed I could do it. I used the method suggested of gyp bound onto a thick wire to form the neck, and you know it looked really good. Shame i didn't get to finish it. I think that customers really don't appreciate how much work can be involved with this type of tribute, I see the florist who made the swan in that pic said it took her 5 hours to make. So obviously that wouldn't have come in at a cheap price. What kind of price do you charge for an hours work on something like this?
