On any of my quotes for weddings I always put at the bottom that the price is subject to the fluctuations of the market - I tell my brides that it is very unlikely that the price will change however there are circumstances for example import restrictions/delays due to a foot and mouth outbreak, failier of a specific crop/supply line - they all seem happy to accept this and it covers my ass just in case! - Had a bad experience with some trachelium being stopped at customs (bugs on it apperiently!)a while back and had to pay retail price in a florists in dublin to get what I needed - was gutted so learnt my lesson!
As for valentines ask your suppliers what the price went up to last year, price the job as you useually would using last years prices then if you get lets say £800, price it at £1000 to cover yourself, be honist with your bride - tell her you have used last years prices to calculate her price and make it clear that this is an "ESTIMATE"
not a "QUOTE" (look at builders - they do this all the time without batting an eyelid - "cost of timbers gone up your extention will be €5000 more than we thought"!!)If thats not good enough for her tell her to take a hike!!! If she does go with you get everything in writing and as someone else said get a deposit! Good Luck
