I don't see what Tesco etc do as being the same business at all. To me there are people who think eating out is going to Mac Donalds for a burger and people who prefer to eat at an A la carte restaurant. The restaurant sells burgers but because they're made from top quality beef I'll pay a tenner for it instead of 99p...... if I want something special. Would a man take his wife to Mc Donalds for an Anniversary meal? No! But would he grab a Mc Donalds burger on his way back from taking the kids to football? Probably yes!
I have a Tesco Express 2 doors from me where you can buy 10 crappy roses for 3 quid but I still sell plenty of Gran prix at £2/ £3 each. I don't cater for their market because I can't/don't want to compete. I don't do bunch's for under £10 and there is little point me trying to flog good grade spray cars by the bunch. Having said that their presence increases my footfall and I just weigh one off against the other.

mainly rears head at peaks..
Supermarkets go all out for market share, with a soupcon of profitability(lots of little spoonfulls soon fill a bowl),we most hear their loud roar at peaks, they are easily(Relatively) combated if you stick as Treen says to your gameplan, dont go head to head on price, show a marked difference between you and them, one your customer appreciates and values and you won't go to far wrong.

Tesco's opened up here 4 months after I opened. Can't say its bothered my business in the slightest. Ok so I dont have things to compare from before they opened, but I reckon they only bother you if you let them!
