It's because the stalk needs to grow from the bulb below the soil surface and continue upwards. The tulip has chemicals called auxins that help the
stem/stalk to grow. Even after cutting, the plant cells inside of the stem
continue to divide and elongate.

Well you have taught me something flower, I didn't know that ranunculus continued growing whist cut, I thought that was soley the province of the tulip.............well you learn something new everyday! That's why floristry is so fantastic!
